The fizz biz:
Cherry cola was created in American ‘soda fountain’ cafés by mixing cherry syrup into cola. This often gave it a synthetic taste. The real cherries used here add a fresher, true-to-life colour, flavour and texture.

  • 200g fresh cherries, pitted and halved, plus extra to garnish
  • 50g caster sugar
  • 6 scoops vanilla ice cream
  • 400ml Chosen by you Diet Cola
  • Canned whipped cream, to serve (optional)
  • Simmer the cherries, sugar and 150ml water in a pan for 6 mins. Blitz with a handheld blender, pass through a sieve and set aside to cool.

  • Divide the cherry mixture between 2 glasses. Put 3 scoops of ice-cream in each glass and top up with cola. Garnish with extra cherries and whipped cream (if using). Serve immediately.
