Cherry cola float
- 200g fresh cherries, pitted and halved, plus extra to garnish
- 50g caster sugar
- 6 scoops vanilla ice cream
- 400ml Chosen by you Diet Cola
- Canned whipped cream, to serve (optional)
Simmer the cherries, sugar and 150ml water in a pan for 6 mins. Blitz with a handheld blender, pass through a sieve and set aside to cool.
Divide the cherry mixture between 2 glasses. Put 3 scoops of ice-cream in each glass and top up with cola. Garnish with extra cherries and whipped cream (if using). Serve immediately.
