Chicken Caesar salad with griddled Little Gem
- 2 chicken breasts
- 4tsp rapeseed oil
- 1 ciabatta roll, torn into 2cm chunks
- 4 Little Gem lettuces, cut into quarters
- 20g Parmesan shavings
- 8 anchovy fillets in olive oil, drained
- 2tbsp Asda Creamy Caesar Dressing
Preheat the oven to 200C/180C Fan/Gas 6.
Place the chicken breasts on a baking tray, drizzle with half of the oil and season with black pepper. Roast for 25 mins until cooked through, adding the ciabatta chunks for the final 10 mins. Remove from the oven and rest for 5 mins before roughly chopping the chicken.
Meanwhile, heat a griddle or frying pan on a high setting until smoking. Rub the rest of the rapeseed oil over the Little Gem lettuces. Griddle for 1 min on each side until char lines appear.
Arrange on a serving platter and top with the chicken, croutons, Parmesan shavings and anchovies. Drizzle with the Caesar dressing and season with black pepper to serve.
