Ingredients
  • 300g penne pasta
  • 30g unsalted butter
  • 2 slices bread
  • 2tbsp olive oil
  • 2 Butcher’s Selection Chicken Breasts, cut into 1cm cubes
  • 1tbsp Asda Easy Garlic
  • 200g pack Asda Light Original Soft Cheese
  • 180g baby leaf spinach
  • 3tbsp parsley, finely chopped
  • Zest 1 lemon
Method
  • Preheat the oven to 200C/180C Fan/Gas 6. Cook the pasta according to the pack instructions and drain, reserving 50ml of the water.

  • Spread ½ the butter on the bread and grill to toast. Heat the olive oil and the remaining butter in a large pan, then fry the chicken along with the garlic for 5-7 mins until the meat is cooked through.

  • Add the pasta and reserved pasta water to the pan with the chicken, then stir in the soft cheese, spinach, parsley, lemon zest and a good grind of black pepper. Toss well and serve with the toast grated or crumbled over.
