Chicken, pesto and sundried tomato ciabatta
- 250g ciabatta loaf
- 1tsp olive oil
- 4tsp green pesto
- 2 Butcher's Selection Chicken Breast fillets, grilled and sliced
- 30g wild rocket
- 1/4 onion
- 6 sundried tomatoes
Cut the ciabatta loaf in half, drizzle with olive oil and toast, cut-sides up, under the grill.
Spread the base with green pesto then top with chicken breast fillets, wild rocket, onion and sundried tomatoes, chopped.
Finish with freshly ground black pepper then top with the other half of the loaf.
