Ingredients
  • 250g ciabatta loaf
  • 1tsp olive oil
  • 4tsp green pesto
  • 2 Butcher's Selection Chicken Breast fillets, grilled and sliced
  • 30g wild rocket
  • 1/4 onion
  • 6 sundried tomatoes
Method
  • Cut the ciabatta loaf in half, drizzle with olive oil and toast, cut-sides up, under the grill.

  • Spread the base with green pesto then top with chicken breast fillets, wild rocket, onion and sundried tomatoes, chopped.

  • Finish with freshly ground black pepper then top with the other half of the loaf.
