Chilli prawn skewers
- 15 Extra Special Jumbo King Prawns, peeled
- Juice 1 lime
- 4 spring onions, cut into 4cm lengths
- 1 large mango, peeled and cut into strips,
- 1 red chilli
- 1tbsp coriander, chopped
- 2tbsp sweet chilli sauce
- 1tsp fish sauce
- 1tbsp Extra Special Cold-Pressed Rapeseed Oil
If using wooden skewers, soak 4 in water to stop them burning.
Put all the prawns, lime juice, 4 spring onions, mango, chilli, coriander, sweet chilli sauce, fish sauce and oil in a bowl and toss together.
Thread the prawns, spring onions and mango onto 4 skewers, alternating between the ingredients. Preheat the grill to medium and cook for 5-7 mins until the prawns are done all the way through and starting to char. Serve with lime wedges and extra chilli sauce.
