Ingredients
  • 2 red chillies,
  • 2 cloves garlic
  • 4tbsp chopped parsley
  • 1 red onion
  • 2tsp dried oregano
  • 150ml red wine vinegar
  • 125ml olive oil
  • 4tbsp lime juice
  • 500g Jersey Royals
Method
  • For the chimichurri sauce, mix 2 red chillies, deseeded and chopped, 2 garlic cloves, crushed, 4tbsp chopped parsley, 1 red onion, chopped, 2tsp dried oregano, 150ml red wine vinegar, 125ml olive oil and 4tbsp lime juice in a bowl. Chill, covered, for 2hrs.

  • Boil 500g Jersey Royals, for 10-15mins, until tender and drain. Toss with the sauce while hot. Serve when cooled.
