- 3 large baking potatoes, unpeeled
- Sunflower oil
Cut the potatoes into long fries – around 1cm thick.
Put in a saucepan with water and boil for 5-6 mins or until just starting to soften. Drain well and pat dry with kitchen paper.
Pour sunflower oil into a heavy-based pan to a depth of 2cm. Heat over a medium heat until a fry sizzles when added to the oil.
Add the fries (in batches if necessary) and cook for 6-8 mins or until crisp and golden.
Drain on kitchen paper, season to taste and serve.
