- 700g new potatoes
- 225g Asda Extra Special Chorizo
- 6 spring onions, trimmed and sliced
- 250g baby plum tomatoes, halved
- 2 tbsp chopped flat-leaf parsley
Quarter the new potatoes, then boil them in lightly salted water until tender.
Meanwhile, cut the chorizo into small cubes and cook in a wok or a large frying pan over a high heat until the sausage starts to crisp and the fat runs out.
Add the spring onions and baby plum tomatoes to the pan, and cook for a further 3 minutes or until they just start to soften.
Drain the new potatoes and toss into the pan along with the parsley. Serve warm.
