Classic mojito
  • Prep: 5 Mins

  • Serves: 1

  • 10 fresh mint leaves, plus extra to serve
  • 30ml sugar syrup
  • Splash soda water
  • 1 lime
  • 50ml white rum such as Bacardi
  • Ice
  • Put the mint leaves in a highball glass and crush lightly with the end of a rolling pin. Add the sugar syrup and a splash of soda and stir well to mix.

  • Squeeze the lime directly into the glass, add the rum and stir well. Fill the glass with ice, garnish with extra mint and serve.

  • TIP: To make your own sugar syrup, put 50g caster sugar and 50ml water in a small saucepan and bring to the boil. Reduce heat and simmer for 2 minutes. Remove from the heat and leave to cool.
