Ingredients
  • 8 chicken thighs
  • 200g cherry tomatoes
  • 1 red onion, peeled and cut into wedges
  • 10 baby potatoes
  • 3 garlic cloves, peeled
  • 1 handful fresh basil leaves
  • 1tbsp olive oil
  • 4 rashers unsmoked bacon, finely chopped
  • Freshly ground black pepper
  • Green vegetables, to serve (optional)
Method
  • Preheat the oven to 180C/160C fan/gas mark 4.

  • Place the chicken thighs, tomatoes, onion, potatoes, garlic and most of the basil in a large roasting dish. Drizzle with the oil, season a good twist of freshly ground black pepper and toss to coat.

  • Sit the chicken on top of the ingredients and cook in the hot oven for around 30mins.

  • After 30mins, sprinkle the bacon evenly across the dish and place back in the oven to cook for a further 15mins, until the bacon is crispy and the chicken is cooked through.

  • Serve with the remaining basil and freshly steamed greens.
