Cod and pesto bake

- 2 tbsp olive oil
- 2 baking potatoes
- 2 x 250g packs Asda Line Caught Cod Fillets
- 4 tsp Asda Green Pesto
- 1 large tomato, sliced
- 50g Asda Grated Mozzarella & Cheddar mix
- 25g fresh breadcrumbs
- Green beans, to serve
Pre-heat the oven to 200C/180C Fan/Gas 6. Grease an ovenproof dish with a little of the oil and place the cod fillets in a single layer.
Rinse the potatoes and cut into wedges. Put them in a pan, cover with cold water, bring to the boil and simmer for 5 minutes. Drain and pat dry with kitchen paper.
Tip them into a bowl with the rest of the oil. Toss to coat them evenly, then spread out on a baking tray, making sure they don't touch, and bake for 30 minutes.
Spread each cod fillet with 1 tsp pesto and top with the sliced tomato. Season with black pepper.
Mix the grated cheese with the breadcrumbs then sprinkle on top of the fish.
Bake for 15-20 minutes or until the fish flakes easily. Serve with wedges and green beans.
