Ingredients
  • 100g salted butter, at room temperature
  • 1 red chilli, de-seeded and finely chopped
  • 1/2 lime, finely grated zest of
  • 1 tbsp lime juice
  • 1 tbsp chopped coriander
  • 1 tsp oil
  • 4 corn on the cobs
Method
  • Mix together all the ingredients except the cobs and shape into a fat sausage. Wrap in baking paper or cling film and chill.

  • Remove any white threads from the corn on the cobs and boil in a pan of water for 10 minutes or until tender.

  • Drain and serve with slices of the flavoured butter.
