Corn on the cob with spicy butter

- 100g salted butter, at room temperature
- 1 red chilli, de-seeded and finely chopped
- 1/2 lime, finely grated zest of
- 1 tbsp lime juice
- 1 tbsp chopped coriander
- 1 tsp oil
- 4 corn on the cobs
Mix together all the ingredients except the cobs and shape into a fat sausage. Wrap in baking paper or cling film and chill.
Remove any white threads from the corn on the cobs and boil in a pan of water for 10 minutes or until tender.
Drain and serve with slices of the flavoured butter.
