Corn with chilli, cheese & lime mayonnaise
- 12 tbsp Chosen by you Real Mayonnaise
- 1 lime, zest and juice of
- 2 red chillies, de-seeded and finely chopped
- 100g Parmesan, grated
- 8 sweetcorn cobs, halved
- Sunflower oil, to grease
Mix the mayonnaise, lime zest and juice, chilli and cheese in a bowl. Chill until ready to serve.
Rub the corn with a little oil. Cook on a cool section of the barbecue for about 8 mins, turning often, until the kernels are cooked and starting to brown. (If you don’t want a chargrilled result, wrap in foil first.) Season and serve with the mayonnaise.
