Ingredients
  • 4 dried apricots, diced
  • 1tbsp fat-free Greek-style yogurt
  • 3tbsp light mayonnaise
  • ½tsp mild curry powder
  • 2tbsp mango chutney
  • ¼ red pepper, deseeded and chopped
  • 140g Asda Classic Chicken Breast Slices, chopped
  • 8 slices Extra Special Malted Farmhouse Loaf
  • 50g Asda Spreadable with Real Butter spread
  • Rocket leaves, to garnish
Method
  • Mix the apricots, yogurt, mayonnaise and curry powder. Stir in the chutney, red pepper and chicken.

  • Make 4 sandwiches with the bread, the spread and the chicken curry filling.

  • Cut off the crusts; slice each sandwich into 3. Serve garnished with the rocket.
