Coronation chicken finger sandwiches
- 4 dried apricots, diced
- 1tbsp fat-free Greek-style yogurt
- 3tbsp light mayonnaise
- ½tsp mild curry powder
- 2tbsp mango chutney
- ¼ red pepper, deseeded and chopped
- 140g Asda Classic Chicken Breast Slices, chopped
- 8 slices Extra Special Malted Farmhouse Loaf
- 50g Asda Spreadable with Real Butter spread
- Rocket leaves, to garnish
Mix the apricots, yogurt, mayonnaise and curry powder. Stir in the chutney, red pepper and chicken.
Make 4 sandwiches with the bread, the spread and the chicken curry filling.
Cut off the crusts; slice each sandwich into 3. Serve garnished with the rocket.
