Courgette pizza bianco

- 290g pack Chosen by you Great To Bake Pizza Mix
- 2 courgettes
- 2tsp olive oil
- 150g fresh peas
- 400g Greek yogurt
- 1tsp lemon zest
- mint leaves
- black pepper
Empty a 290g pack Chosen by you Great To Bake Pizza Mix into a bowl and add 200ml warm water. With a fork, mix into a ball of dough. Knead on a lightly floured surface for 5 mins. Shape into 2 balls. Roll out each one to a 20cm circle.
Put on a lightly greased and floured baking tray. Cover with lightly oiled clingfilm and leave in a warm place for 10 mins.
Preheat the oven to 220C/ 200C Fan/Gas 7. Bake the pizzas for 10-15 mins until crisp.
Meanwhile, slice 2 courgettes using a vegetable peeler. Brush with 2tsp olive oil and grill until softened. Simmer 150g fresh peas for 3 mins, then drain.
Spread 400g Greek yogurt over the pizzas. Top with the peas, sliced courgettes, 1tsp lemon zest and mint leaves. Sprinkle with paprika and black pepper.
