Courgette salad with feta & pine nuts

- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp Dijon mustard
- 2 level tbsp sultanas
- 25g pine nuts
- 3 courgettes
- 70g Feta cheese, crumbled
- Good handful of rocket
Whisk together the oil, lemon juice and zest, mustard and honey. Season with pepper, add the sultanas and set aside.
Put the pine nuts in a dry frying pan or griddle pan and toss over a medium heat until golden. Tip onto a plate and set aside.
Top and tail the courgettes and cut into very thin slices using a potato peeler.
Toss the courgettes in the dressing and gently mix in the Feta cheese, pine nuts and rocket.
