Ingredients
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 2 level tbsp sultanas
  • 25g pine nuts
  • 3 courgettes
  • 70g Feta cheese, crumbled
  • Good handful of rocket
Method
  • Whisk together the oil, lemon juice and zest, mustard and honey. Season with pepper, add the sultanas and set aside.

  • Put the pine nuts in a dry frying pan or griddle pan and toss over a medium heat until golden. Tip onto a plate and set aside.

  • Top and tail the courgettes and cut into very thin slices using a potato peeler.

  • Toss the courgettes in the dressing and gently mix in the Feta cheese, pine nuts and rocket.
