- 200g golden caster sugar
- 500ml water
- vanilla pod
- soda water
Place 200g golden caster sugar in a pan with 500ml water. Slice a vanilla pod lengthways and scrape the seeds into the pan. Add the pod. Heat gently to dissolve the sugar then simmer for 10 mins or until syrupy.
Leave to cool. When cold, store in a bottle in the fridge.
Serve diluted with soda water. For extra flavour, add pomegranate seeds.
