Crispy potato beef casserole
- 450g pack Butcher’s Selection Beef Stewing Steak, trimmed of fat and cut into small chunks
- 2tbsp plain flour
- 600g bag Asda Casserole Vegetables
- 500ml hot stock made with 1 reduced-salt beef stock cube
- 300g pack Asda Crispy Potato Slices
- 2tsp rapeseed oil
Preheat the oven to 180C/160C Fan/Gas 4.
Coat the chunks of steak in the flour. Heat the rapeseed oil in a large frying pan, brown the steak in batches and transfer to a casserole dish.
Fry the vegetables in the same frying pan to colour. Stir into the casserole dish with the hot beef stock. Cook, uncovered, in the oven for 1 hr 30 mins.
Top the casserole with the potato slices and return to the oven for 30 mins, or until the potato has browned.
