Ingredients
  • 2 crumpets
  • 1 tbsp ketchup
  • Slice of cooked ham
  • 1 tbsp canned sweetcorn
  • 25g grated mozzarella
  • Red pepper, diced
  • Cherry tomatoes, to serve
  • Lettuce, to serve
Method
  • Toast the crumpets and spread each one with tomato ketchup.

  • Divide the ham between the crumpets, add the sweetcorn and diced red pepper.

  • Sprinkle with grated mozzarella.

  • Grill until the cheese melts.

  • Serve with cherry tomatoes, lettuce and cucumber slices.
