Crushed pea & feta dip
- 1tbsp flaked almonds
- 200g frozen peas
- 10g mint
- 10g basil
- 10g dill
- ½ red chilli, deseeded and finely chopped
- ½ clove garlic, finely crushed
- 1tbsp olive oil
- Zest and juice 1 lemon
- 50g feta
Preheat the oven to 180C/160C Fan/Gas 4.
On a baking tray, toast the flaked almonds for 5 mins until golden.
Put the peas in a sieve over the sink and pour boiling water over them to thaw. Rinse under cold water.
Roughly chop the mint, basil and dill and put in a food processor with the peas, chilli, garlic, olive oil, and lemon zest and juice. Pulse until the peas start to break down. Alternatively, crush in a bowl with a potato masher. Season with freshly ground black pepper.
Put the crushed peas in a bowl and crumble over the feta and the toasted almonds before serving.
