Ingredients
  • 1tbsp flaked almonds
  • 200g frozen peas
  • 10g mint
  • 10g basil
  • 10g dill
  • ½ red chilli, deseeded and finely chopped
  • ½ clove garlic, finely crushed
  • 1tbsp olive oil
  • Zest and juice 1 lemon
  • 50g feta
Method
  • Preheat the oven to 180C/160C Fan/Gas 4.

  • On a baking tray, toast the flaked almonds for 5 mins until golden.

  • Put the peas in a sieve over the sink and pour boiling water over them to thaw. Rinse under cold water.

  • Roughly chop the mint, basil and dill and put in a food processor with the peas, chilli, garlic, olive oil, and lemon zest and juice. Pulse until the peas start to break down. Alternatively, crush in a bowl with a potato masher. Season with freshly ground black pepper.

  • Put the crushed peas in a bowl and crumble over the feta and the toasted almonds before serving.
