Ingredients
  • ½ cucumber (thinly sliced)
  • Handful mint leaves
  • 225ml Asda Diet Lemonade
  • 4 flat lolly moulds
  • 4 lolly sticks
Method
  • Divide half the cucumber slices among the 4 lolly moulds, along with 3-4 mint leaves per lolly. Pour the lemonade halfway up the moulds, then transfer to the freezer for 2 hrs to set.

  • Add the remaining slices of cucumber and a few more mint leaves to each half-frozen mould, then top up with the remaining lemonade. Insert the sticks (they should stick halfwayinto the part-frozen lolly), then pop them in the freezer overnight to freeze completely.

  • To serve, dip the lolly moulds in hot water very briefly to release the lollies. Enjoy immediately.
