- ⅓ cucumber
- 125g low-fat yogurt
- 1tbsp chopped fresh coriander
- 1tbsp mint jelly
- 1tbsp chopped mint
- 1 shallot, finely chopped
- 1tbsp lemon juice
- ½ red chilli, very finely chopped (optional)
Halve the cucumber and scoop out the watery seeds using a spoon. Finely dice the cucumber and mix together with the rest of the ingredients.
Cover and chill in the fridge for at least 15mins to let the flavours come together before serving.
