Ingredients
  • ⅓ cucumber
  • 125g low-fat yogurt
  • 1tbsp chopped fresh coriander
  • 1tbsp mint jelly
  • 1tbsp chopped mint
  • 1 shallot, finely chopped
  • 1tbsp lemon juice
  • ½ red chilli, very finely chopped (optional)
Method
  • Halve the cucumber and scoop out the watery seeds using a spoon. Finely dice the cucumber and mix together with the rest of the ingredients.

  • Cover and chill in the fridge for at least 15mins to let the flavours come together before serving.
