Cucumber, strawberry and poppy seed salad
- 2 level tbsp caster sugar
- 4 tbsp white wine vinegar
- 1 cucumber
- 400g strawberries, sliced
- 1 tbsp chopped mint
- 1 tbsp poppy seeds
Dissolve the sugar in 2 tbsp boiling water. Cool, then mix with the vinegar.
Halve the cucumber lengthways. Remove the seeds. Slice thickly. Put in a dish.
Pour over the sugar mixture. Leave for 30 minutes.
Put the cucumber and strawberries in a dish. Sprinkle over the mint and poppy seeds.
