Ingredients
  • 2 level tbsp caster sugar
  • 4 tbsp white wine vinegar
  • 1 cucumber
  • 400g strawberries, sliced
  • 1 tbsp chopped mint
  • 1 tbsp poppy seeds
Method
  • Dissolve the sugar in 2 tbsp boiling water. Cool, then mix with the vinegar.

  • Halve the cucumber lengthways. Remove the seeds. Slice thickly. Put in a dish.

  • Pour over the sugar mixture. Leave for 30 minutes.

  • Put the cucumber and strawberries in a dish. Sprinkle over the mint and poppy seeds.
