Dreamy s’mores sandwich cookies
- 250g Asda Milk Choc Chip Cookie Dough, cut into 8 even-sized pieces
- 100g Extra Special Espresso Dark Chocolate
- 20g mini marshmallows or 2 jumbo mallows, cut in half
Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray
with baking paper.
Shape the cookie dough into 8 even-sized balls and, using a rolling pin, flatten each ball into a circle. Transfer to the baking tray, spacing the cookies evenly apart, then bake for 10-12 mins, until golden. Cool for 5 mins.
Switch the oven to the grill setting – make sure you put the rack at the centre of the oven as this will help prevent the marshmallows burning.
Set aside 4 cookies. Turn the remaining 4 cookies flat-side up. Top each cookie with a square of the chocolate, then top with some of the marshmallows.
Cook under the grill for 1-2 mins until the mallows are just toasted and golden, then remove from the oven. Top with the 4 reserved cookies, allow to cool for 5 mins, then stack up into a tower before serving.
