6 super summer breakfast ideas

Along with lie ins, weekends give you the perfect chance to switch up your usual go-to breakfast for something more indulgent and delicious. Think Instagram-worthy runny yolks on sourdough, multicoloured smoothie bowls topped with perfectly sliced bananas and don't forget a steaming hot pot of freshly brewed coffee.

Fingers crossed the sun stays out for the weekend so you can take your cushions outside and enjoy the 'most important meal of the day' al fresco. And don't forget to lay the table with jugs and glasses of orange juice, big pots of tea so you can keep everyone topped up and big bowls to fill with granola or smoothie.

Make sure you stock up on all the essentials before Saturday morning so you can wake up fresh and dive into freshly baked croissants, delicious chewy bagels, berries for your smoothie and fresh, in-season peaches...

Here are some of our favourite summer breakfast recipes to inspire your weekend.

1. Peach, passion fruit & crème fraîche smash toast

Sweet, juicy and in season - peaches are the perfect topping to add to your toast. This totally tropical topping, together with passion fruit and crème fraîche, is wonderful on buttery brioche and goes well with a hot cuppa too.

2. Prosciutto and rocket brunch bagels

Having a lazy family Sunday? These bagels are ideal for the whole family to enjoy on a Sunday mid morning. Get the kids to help prepare the rocket and prosciutto and sundried tomato filling, then enjoy all together in the garden.

3. Dairy-free poppy seed and banana pancakes

Pancakes are always a winner and these rather tasty banana pancakes are no exception. Made with coconut milk and dairy-free yogurt, they're also perfect for anyone following a dairy-free diet. If you've got different fruit in the house, chop it up and pile on top.

4. Green apple and kale smoothie

Smoothies are so versatile. The thickness of the end product can be varied easily by adding more or less liquid - so whether you prefer eating out of a bowl with a spoon and topped with pretty crunchy almonds and pumpkin seeds, or poured into a flask for taking on the move, or a glass for enjoying in the garden you can have it however you like!

Shake up your mornings and start the day right with this fruit-and veg-rich blend made with a mixture of kale, apple and banana for a zingy and creamy flavour.

5. Berry & passion fruit yogurt pots

You can make yogurt, berries and oats look delicious and restaurant-worthy in these cute pots. Pick your favourite fruits (this recipe uses passion fruit, banana and mixed berries) and combine with yougurt and cinnamon toasted oats to create a delicious brekky. We like the idea of serving them in individual jars, too.

6. Frehsly baked croissant with scrambled egg

Scrambled eggs gets a summer, weekend makeover in this dish. The eggs are taken to the next level with added chives and ham and served alongside freshly baked croissants. The sweetness of the pastry pairs perfectly with the saltiness of the ham. Hello weekend!
