Ingredients
  • 1 large onion, chopped
  • 3 tbsp sunflower oil
  • 750g Asda Diced Casserole Beef
  • 1 beef stock cube
  • 400g can Asda Chopped Tomatoes
  • 400g can Asda Chopped Tomatoes with Chillies and Peppers
  • 1 tsp mixed dried herbs
  • 200g carrots, sliced
  • 1 tbsp cornflour
  • 1 red pepper, de-seeded and sliced
  • 1 green pepper, de-seeded and sliced
  • 3 tbsp paprika
  • 1 tbsp tomato purée
  • Sour cream, to serve
Method
  • Pre-heat the oven to 150C/130C Fan/Gas 2. Cook the onions in 1 tbsp oil until soft.

  • Transfer to a large casserole dish. Add another tablespoon of oil and cook the beef, a few pieces at a time, until browned on all sides. As each batch is browned, add it to the casserole dish.

  • Dissolve the stock cube in 500ml hot water and add to the stew with the one can of tomatoes, the herbs and the carrots.

  • Cover the dish and cook for 3 hours. Mix the cornflour with a little cold water and stir into the stew.

  • Cook the peppers over a medium heat in 1 tbsp oil for 4-5 minutes.

  • Stir in the paprika, then add to the basic beef stew with the tomato purée and the can of Asda Chopped Tomatoes with Chillies and Peppers. Heat through and simmer, covered for 10 minutes.

  • Add a dollop of sour cream to each portion before serving.
