Ingredients
  • 1 onion, chopped
  • 4 tbsp olive oil
  • 2 garlic cloves, chopped
  • 500g tomatoes, chopped
  • 2 tsp Asda Dried Herbs de Provence
  • 1 tsp sugar
  • 1 tsp ground coriander
  • 2 tbsp tomato purée
  • 2 peppers, de-seeded and chopped
  • 2 courgettes, sliced
Method
  • Fry the onion in the 2 tbsp oil until soft, add the garlic and cook for 1 minute.

  • Add to the pan the tomatoes, herbs de Provence, sugar, coriander,tomato purée and 4 tbsp water. Simmer, uncovered, for 15 minutes, stirring.

  • Turn off the heat. Heat 1 tbsp olive oil in a frying pan and cook the peppers for 4 minutes.

  • Add to the sauce. Add 1 tbsp oil to the frying pan and cook the courgettes for 5 minutes. Tip onto the sauce.

  • Cover the pan and heat until simmering. Simmer gently for 15 minutes. Season to taste. Serve hot or cold.
