Easy vegetable ratatouille

- 1 onion, chopped
- 4 tbsp olive oil
- 2 garlic cloves, chopped
- 500g tomatoes, chopped
- 2 tsp Asda Dried Herbs de Provence
- 1 tsp sugar
- 1 tsp ground coriander
- 2 tbsp tomato purée
- 2 peppers, de-seeded and chopped
- 2 courgettes, sliced
Fry the onion in the 2 tbsp oil until soft, add the garlic and cook for 1 minute.
Add to the pan the tomatoes, herbs de Provence, sugar, coriander,tomato purée and 4 tbsp water. Simmer, uncovered, for 15 minutes, stirring.
Turn off the heat. Heat 1 tbsp olive oil in a frying pan and cook the peppers for 4 minutes.
Add to the sauce. Add 1 tbsp oil to the frying pan and cook the courgettes for 5 minutes. Tip onto the sauce.
Cover the pan and heat until simmering. Simmer gently for 15 minutes. Season to taste. Serve hot or cold.
