Ingredients
  • 1 flatbread
  • 15g houmous
  • 50g falafels, halved
  • 20g roasted red pepper, cut in strips
  • Pickled red cabbage
  • Sliced green chillis
  • 1tbsp Greek-style yogurt
  • Whole mint leaves
Method
  • Toast or griddle a tortilla or flatbread and spread with houmous. Add falafels, halved, red pepper, pickled red cabbage and sliced green chillis. Drizzle with Greek-style yogurt and finish with a scattering of whole mint leaves and a good grind of fresh black pepper.
