Ingredients
  • 2 tortillas
  • 2tbsp red pesto
  • 1 ball burrata
  • 2tbsp torn coriander
  • Ground black pepper to season
Method
  • Heat a griddle pan over a high heat and fry 2 tortillas for 1 min on each side, until crisp and golden. Leave to cool completely.

  • Spread red pesto over the tortillas, then cut them into 16 small triangles.

  • Tear burrata into bite-sized pieces. Top each tortilla triangle with pieces of burrata. Sprinkle over coriander and season with freshly ground black pepper.
