Flatbreads with burrata & red pesto
- 2 tortillas
- 2tbsp red pesto
- 1 ball burrata
- 2tbsp torn coriander
- Ground black pepper to season
Heat a griddle pan over a high heat and fry 2 tortillas for 1 min on each side, until crisp and golden. Leave to cool completely.
Spread red pesto over the tortillas, then cut them into 16 small triangles.
Tear burrata into bite-sized pieces. Top each tortilla triangle with pieces of burrata. Sprinkle over coriander and season with freshly ground black pepper.
