Giant chocolate swirl meringues
- 200g Extra Special 85% Cocoa Solids Dark Cooking Chocolate, broken into pieces
- 4 large free-range egg whites
- 250g caster sugar
- 2tsp cornflour
- 1tsp vanilla extract
- 1tsp white wine vinegar
Preheat the oven to 150C/130C Fan/Gas 2. Line 2 baking sheets with baking paper.
Melt half the chocolate in a bowl over a pan of simmering water – take care not to let the bowl touch the water. Allow to cool slightly.
In a large bowl, whisk the egg whites with a handheld mixer until stiff. Add the sugar, 24 | ASDA.COM/GROCERIES 1tbsp at a time, whisking after each one. Add the cornflour, vanilla and vinegar and gently mix in with a large metal spoon.
Drizzle on the melted chocolate but don’t mix in.
Spoon the meringue mixture into 6 large peaks, 3 on each baking sheet, making a swirling motion to give a chocolate ripple. Bake for 45 mins, then remove from the oven and set aside to cool on a wire rack.
Melt the remaining chocolate and drizzle over the meringues. For an extra treat, serve with whipped cream (optional).
