Miguel Barclay’s gnocchi al forno
- ½ onion, sliced
- 100ml semi-skimmed milk
- 30g Stilton
- 100g gnocchi
- A handful of frozen broccoli (about 50g)
- 1tsp olive oil
- 1tsp plain flour
Preheat your oven to 190C/170C Fan/Gas 5.
Gently fry the onion in the olive oil in an ovenproof pan or casserole dish. Once it softens, stir in the flour and continue to cook for 1 min.
Next, add the milk very slowly, while continuing to stir, to create a thick sauce. Crumble the Stilton and mix it in, then add the gnocchi and the broccoli florets.
Transfer the dish to the oven and bake for about 20 mins until the top
is golden brown.
