Gnocchi with spinach & tomato

- 2 x 350g packs Asda Extra Special Spinach and Ricotta Filled Gnocchi
- 350g pot Asda Tomato and Basil Sauce
- 250g mushrooms, sliced
- 180g bag Asda Baby Spinach
- 50g Parmesan, shaved into thin pieces with a vegetable peeler or sharp knife
- 2 tbsp oil
Heat a large pan of water until boiling. Add the gnocchi and simmer for 2 minutes, then drain and set aside.
Heat the tomato and basil sauce in the pan until just simmering.
Meanwhile, heat the oil in a large frying pan and cook the mushrooms until they start to turn golden. Add the spinach and cook for 1-2 minutes or until it wilts.
Mix the sauce with the gnocchi, spinach and mushrooms, and serve sprinkled with the Parmesan shavings.
