Goat’s cheese, watercress, puy lentil & tomato salad
- 120g pack Asda Watercress, Spinach & Rocket Salad
- 5 radishes, thinly sliced
- 2 x 250g pack Merchant Gourmet Puy Lentils
- 4 Extra Special Apple Balsamic Vinegar Infused Beetroot, sliced
- 25g dill, chopped
- 100g cherry tomatoes, halved
- 100g Asda Soft Goat's Cheese
- 40g Asda Lightly Sea Salted Croutons
- 1tbsp extra virgin olive oil
- 1tsp wholegrain mustard
- 1tbsp balsamic glaze
In a large serving bowl, layer on the salad, radishes, lentils, beetroot, dill and cherry tomatoes.
Crumble over the cheese and top with the croutons.
Whisk the oil, mustard and balsamic glaze with 1tbsp water. Drizzle over the salad and serve immediately.
