Golden-yolked huevos rancheros on waffles with avocado and a chilli salsa

- 250g cherry tomatoes, halved or quartered
- ¼ red onion, finely chopped
- 2tbsp chopped coriander
- Juice 1 lime
- 1 red chilli, sliced
- 4 Asda Round Waffles
- 4 Extra Special Golden Yolk Free Range eggs
- 1tbsp rapeseed oil
- 2 medium avocados, peeled, destoned and sliced
Stir together the tomatoes, onion, coriander, lime juice and most of the chilli. Season with pepper, then chill for 10 mins.
Heat the waffles according to the pack instructions and divide between 4 plates.
Working in batches, fry the eggs in the oil in a nonstick frying pan until the whites are set but the yolks are still runny.
Top each waffle with an egg and ½ an avocado. Divide the salsa between the plates, and season with pepper to serve.
