Ingredients
  • 750g Chantenay carrots, trimmed
  • 3tbsp rapeseed oil
  • 4tbsp clear honey
  • 1tbsp coarse-grain mustard
  • 3tbsp orange juice
  • A few sprigs thyme, to serve (optional)
Method
  • Preheat the oven to 220C/200C Fan/Gas 7.

  • Put the carrots and the oil in a large roasting tin.Toss to coat, then roast in the oven for 30 mins.

  • Mix together the honey, mustard, and juice, and drizzle over the carrots.

  • Roast for 10 mins until the carrots are soft and crisp at the edges. Sprinkle with the thyme, if using.

  • TOP TIP: If your carrots burn when you glaze them, make sure they're almost fully cooked before tossing them in honey. Check every couple of minutes while they're roasting.
