Gorgeous glazed carrots
- 750g Chantenay carrots, trimmed
- 3tbsp rapeseed oil
- 4tbsp clear honey
- 1tbsp coarse-grain mustard
- 3tbsp orange juice
- A few sprigs thyme, to serve (optional)
Preheat the oven to 220C/200C Fan/Gas 7.
Put the carrots and the oil in a large roasting tin.Toss to coat, then roast in the oven for 30 mins.
Mix together the honey, mustard, and juice, and drizzle over the carrots.
Roast for 10 mins until the carrots are soft and crisp at the edges. Sprinkle with the thyme, if using.
TOP TIP: If your carrots burn when you glaze them, make sure they're almost fully cooked before tossing them in honey. Check every couple of minutes while they're roasting.
