Greek grilled chicken and rice salad
- For the salad
- 2 chicken breasts
- 250g vine tomatoes, deseeded and chopped
- 1 cucumber, seeds scraped out with a spoon and roughly chopped
- 2 x 250g packs Uncle Ben’s Golden Vegetable Rice, heated according to pack instructions
- Handful mint, chopped
- 100g feta, crumbled
- For the dressing
- ½tbsp white wine vinegar
- Juice ½ lemon
- 1 clove garlic, crushed
- ½tsp dried oregano
- Pinch of black pepper
Grill the chicken breasts on the barbecue or cook under a preheated grill for 6-7 minutes on each side, turning half way through, until cooked through. Meanwhile, toss together the rest of the salad ingredients.
Stir together the dressing ingredients, and slice the cooked chicken.
To serve, top the salad with the grilled chicken and drizzle over the dressing.
