Greek-style pasta salad
- 300g pasta (fusilli or penne)
- 2 tbsp lemon juice
- 3 tbsp olive oil
- 1 garlic clove, crushed
- 24 cherry tomatoes, halved
- 1âˆ•3 cucumber, halved lengthways, de-seeded and sliced
- 1 red pepper, de-seeded and chopped
- 1 red onion, chopped
- 120g feta cheese
- 2 tbsp chopped mint
Add the pasta to a large pan of boiling water. Bring back to the boil and then simmer for 10-12 minutes. Drain.
Whisk together the lemon juice, oil and garlic. Season and mix with the pasta.
Stir in the tomatoes, cucumber, red pepper and red onion. Break the feta into 1cm pieces and add to the pasta with the mint.
