Ingredients
  • 300g pasta (fusilli or penne)
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 garlic clove, crushed
  • 24 cherry tomatoes, halved
  • 1∕3 cucumber, halved lengthways, de-seeded and sliced
  • 1 red pepper, de-seeded and chopped
  • 1 red onion, chopped
  • 120g feta cheese
  • 2 tbsp chopped mint
Method
  • Add the pasta to a large pan of boiling water. Bring back to the boil and then simmer for 10-12 minutes. Drain.

  • Whisk together the lemon juice, oil and garlic. Season and mix with the pasta.

  • Stir in the tomatoes, cucumber, red pepper and red onion. Break the feta into 1cm pieces and add to the pasta with the mint.
