Ingredients
  • FOR THE EGGS:
  • 20g spinach
  • 10g flat-leaf parsley
  • 10g fresh coriander
  • 3 medium eggs
  • 1 spring onion, chopped
  • 2tbsp olive oil
  • FOR THE SALSA:
  • 2 cloves garlic, crushed
  • 1 red chilli, chopped
  • 2 tomatoes, chopped
  • 5g fresh dill, chopped
  • Juice ½ lemon
  • 2tbsp olive oil
Method
  • Put all of the ingredients for the eggs into a blender and blitz until mixed together and frothy.

  • Pour into a small, nonstick frying pan and cook over a low heat for 2-3 mins or until almost set. Cover the pan and cook for 6-7 mins.

  • Meanwhile, stir together the ingredients for the salsa.

  • To serve, carefully lift the omelette onto a plate and top with the salsa.
