Ingredients
  • 230g pack Extra Special Lobster Tails
  • 2tsp olive oil
  • 10g butter
  • 10g breadcrumbs
  • 1 small red chilli, deseeded and chopped (optional)
  • 2tbsp chopped parsley
  • Zest of 1 lime
Method
  • Using a sharp knife, cut each lobster tail in half along its length. Brush with the oil.

  • Preheat the grill to medium.

  • Place the tails on the grill pan, shell side up, and cook for 8-10 mins.

  • Melt the butter in a pan. Add the breadcrumbs and chilli (if using) and cook until the crumbs are pale golden. Stir in the chopped parsley and lime zest.

  • Turn the lobster tails over and top with the fried breadcrumbs.

  • Pop under the grill for 1 min until golden, then serve.
