Grilled lobster tails
- 230g pack Extra Special Lobster Tails
- 2tsp olive oil
- 10g butter
- 10g breadcrumbs
- 1 small red chilli, deseeded and chopped (optional)
- 2tbsp chopped parsley
- Zest of 1 lime
Using a sharp knife, cut each lobster tail in half along its length. Brush with the oil. Preheat the grill to medium. Place the tails on the grill pan, shell side up, and cook for 8-10 mins.
Melt the butter in a pan. Add the breadcrumbs and chilli (if using) and cook until the crumbs are pale golden. Stir in the chopped parsley and lime zest.
Turn the lobster tails over and top with the fried breadcrumbs. Pop under the grill for 1 min until golden, then serve.
