Ham, broccoli and sweetcorn frittata
- 1tbsp sunflower oil
- 125g Extra Special Broccoli Tips, roughly chopped
- 120g Asda Pulled Ham
- 1tbsp fresh chives, sliced
- 100g frozen sweetcorn
- 6 large eggs, lightly beaten
- 50g Asda 50% Less Fat Mature British Cheese
- Crisp green salad, to serve
Heat the oil in a medium nonstick frying pan. Add the broccoli tips and stir-fry for 1-2 mins until they are just starting to soften.
Add the ham, chives and sweetcorn. Fry for 1 min until all the ingredients are heated through.
Pour the beaten eggs into the frying pan and sprinkle over the grated cheese. Reduce the heat to low and allow the frittata to cook for 10 mins, until the base is set but you still have a puddle of raw egg on top.
Preheat the grill to medium.
Put the frying pan under the preheated grill for 1-2 mins until the top of the frittata is golden and the egg is completely set. Serve straight away with a crisp green salad.
