Ingredients
  • 1 tbsp sunflower oil
  • 1 small onion, chopped
  • 250g frozen peas, cooked and drained
  • 2 slices of ham, chopped
  • 6 large eggs
  • 75g mature Cheddar, grated
Method
  • Heat the oil in a 21-22cm nonstick frying pan. Add the onion and cook over a low heat, until soft.

  • Add the peas and ham. Cook until heated through.

  • Beat the eggs together, stir in most of the cheese and season with pepper. Pour the egg into the pan. Stir to distribute the peas, ham and onions evenly.

  • Cook over a low heat for about 15 minutes, until the base is set but there's still a film of liquid egg on top.

  • Heat the grill. Slide the frittata onto a baking tray and top with the rest of the cheese. Grill for 2-3 minutes until the top is golden and the egg is set. Delicious eaten hot or cold.
