- 4 Butcher’s Selection Chicken Breasts
- 2 vine-ripened tomatoes, halved and thinly sliced
- 2 x 125g packs Asda Light Mozzarella, thinly sliced
- 20 basil leaves
- 1tbsp olive oil
- 3tbsp Asda Green Pesto
- Garlic bread, to serve
- Rocket, to serve
Cut widthways slashes into the chicken breasts 2cm apart, going two-thirds of the way through, and put on a baking tray. Preheat the oven to 200C/180C Fan/Gas 6.
Add a slice of tomato, a slice of mozzarella and a basil leaf to each cut.
Mix together the olive oil and the pesto, then drizzle over the chicken breasts. Bake for 30-35 mins. Serve with garlic bread and rocket.
