Ingredients
  • 4 Butcher’s Selection Chicken Breasts
  • 2 vine-ripened tomatoes, halved and thinly sliced
  • 2 x 125g packs Asda Light Mozzarella, thinly sliced
  • 20 basil leaves
  • 1tbsp olive oil
  • 3tbsp Asda Green Pesto
  • Garlic bread, to serve
  • Rocket, to serve
Method
  • Cut widthways slashes into the chicken breasts 2cm apart, going two-thirds of the way through, and put on a baking tray. Preheat the oven to 200C/180C Fan/Gas 6.

  • Add a slice of tomato, a slice of mozzarella and a basil leaf to each cut.

  • Mix together the olive oil and the pesto, then drizzle over the chicken breasts. Bake for 30-35 mins. Serve with garlic bread and rocket.
