- 600g large baby potatoes
- 15g butter
- 1 tbsp oil
Pre-heat the oven to 200C/180C Fan/Gas 6. Take 600g large baby potatoes and cut parallel slices across each potato, about 3mm apart. Cut about three-quarters of the way down and take care not to go all the way through.
Put on a baking tray with a rim or in a shallow roasting tin. Mix 15g butter and 1 tbsp oil together and brush generously over the potatoes.
Cook in the oven for 1 hour or until tender and golden and crisp on the outside, turning halfway through.
