Ingredients
  • 3tbsp soft dark brown sugar
  • 2tbsp fresh ginger, finely grated, plus slices for garnish
  • Juice of 1 lemon
  • Crushed ice, to serve
  • Mint sprigs, to garnish
  • Lemon slices, to garnish
Method
  • Put the sugar and ginger in a saucepan with 500ml water. Place over a high heat and bring to the boil. Remove from the heat and stir in the lemon juice.

  • Allow to cool before straining into 4 medium highball glasses filled with crushed ice. Serve immediately garnished with slices of ginger, lemon and mint sprigs.
