Hiyashiame sweet ginger drink
- 3tbsp soft dark brown sugar
- 2tbsp fresh ginger, finely grated, plus slices for garnish
- Juice of 1 lemon
- Crushed ice, to serve
- Mint sprigs, to garnish
- Lemon slices, to garnish
Put the sugar and ginger in a saucepan with 500ml water. Place over a high heat and bring to the boil. Remove from the heat and stir in the lemon juice.
Allow to cool before straining into 4 medium highball glasses filled with crushed ice. Serve immediately garnished with slices of ginger, lemon and mint sprigs.
