Ingredients
  • 1 onion
  • 1 bay leaf
  • 4 cloves
  • 600ml milk
  • A pinch of salt
  • A small pinch of freshly grated nutmeg
  • 200g stale white bread (weighed without crusts)
  • 25g butter
  • 3 tbsp double cream (optional)
Method
  • Cut onion into quarters and stud each quarter with a clove. Put in a pan with milk, bay leaf, nutmeg and salt.

  • Heat gently until simmering. Remove from the heat and set aside for 30 minutes. Discard the onion, clove and bay leaf. Reheat until hot, but not boiling.

  • Make breadcrumbs with the white bread. Stir into the milk with butter and set aside for 10 minutes.

  • To make it extra creamy, stir in double cream. Leave to cool and refrigerate. Reheat for 3 minutes in the microwave on Christmas Day.
