Italian-style warm potato salad
- 750g Jersey Royals
- 200g frozen peas
- 2tsp rapeseed oil
- ½ onion, thinly sliced
- 4 rashers smoked streaky bacon, chopped
- 1tbsp chopped parsley
Put the Jersey Royals in a pan of cold water. Bring to the boil and simmer for 20 mins until tender.
Add the frozen peas and cook for 2 mins. Drain well.
Meanwhile, heat the oil in a large frying pan. Cook the onion until softened.
Add the bacon and cook for 10 mins, or until crisp.
Mix the potatoes and peas with the onion and bacon.
Sprinkle over the parsley. Season with black pepper and serve warm.
