Italian vegetable & bean soup
- 1 large onion, chopped
- 2 carrots, diced
- 1 parsnip, diced
- 1 courgette, diced
- 400g can Asda Chopped Tomatoes With Herbs
- 2 x 290g cans Asda Borlotti Beans, drained
- 75g Wensleydale cheese, crumbled
- 200g Asda Baguette
- 2 tbsp sunflower oil
Heat the oil in a large pan and add the onion, carrot and parsnips. Stir, then cover and cook over a low heat for 10 minutes, stirring occasionally.
Add the courgette, tomatoes, beans and 300ml water. Cover and simmer for 10 minutes.
Remove half the veg and beans with a draining spoon. Purée the rest in a blender or processor. Return the purée to the pan with the reserved vegetables and reheat.
Top with the cheese and serve with the baguette.
