Ingredients
  • 30g dairy free spread
  • 30g granulated sugar
  • 1 small egg yolk
  • 1tbsp semi skimmed
  • 40g plain flour
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • 25g strawberry jam
Method
  • In a standard size microwavable mug add the chopped butter and place in the microwave for 15 seconds until melted.

  • With a fork mix in 30g sugar, egg yolk and milk until combined.

  • Add in the flour, baking powder and ¼ tsp cinnamon and mix together.

  • Dollop strawberry jam in the middle of the mixture and gently push down.

  • In a small bowl add the remaining 5g of sugar and ¼ tsp of cinnamon and mix together.

  • Microwave for 1 minute until cooked.

  • Take out the microwave and top with a sprinkle of the sugar cinnamon.
