Ingredients
  • 1 onion, roughly chopped
  • 4 cloves garlic
  • 2 large thumbs ginger, peeled and chopped
  • 1 bird's eye chilli
  • 2 tbsp fresh thyme
  • 1 tsp all spice
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp turmeric
  • 1 tsp coarse ground black pepper
  • 2 limes, zest and juice of
  • 75ml reduced salt soy sauce
  • 1kg chicken wings
Method
  • Combine everything except the chicken in a food processor and blitz. Cover the chicken wings with the marinade, cover and refrigerate. Marinate for a minimum of two hours and preferably overnight for maximum flavour.

  • To cook, pre-heat the oven to 200C/180C Fan/Gas 6. Lightly oil a baking sheet and spread the marinated wings in a single even layer. Bake for 35 – 40 minutes. Serve piled in a bowl with plenty of kitchen roll for finger wiping!
