Ken Hom’s new potatoes with fresh coriander dressing
- 450g new potatoes
- 2tbsp white rice vinegar
- 3tbsp fresh coriander, finely chopped
- 3tbsp spring onions, finely chopped
- 1tbsp sesame oil
- 2tsp groundnut oil
Cook the potatoes in boiling water for 4 minutes. Drain well and put them into a serving bowl.
In a small bowl, mix the vinegar with the coriander and spring onions. Slowly beat in the oils, pour over the potatoes, toss well and serve at once.
